Having a few reliable, low-effort recipes in your rotation makes eating well far more manageable. This one-pan cod recipe is a constant favorite in my own kitchen when I want a satisfying, high-protein meal without a pile of dishes to clean up afterward.
If you are navigating midlife, you might have noticed that your body doesn’t respond to food the way it used to. Hormonal shifts can affect everything from your blood sugar to how your body holds onto weight, which is why perimenopause weight changes require a different approach. A balanced sheet-pan meal like this provides steady energy without causing unnecessary blood sugar spikes.
Why One-Pan Cod and Veggies Supports Midlife Health
As a Certified Holistic Nutritionist, I look at every plate as an opportunity to support your physiology. This recipe is a combination of wild-caught white fish, root vegetables, and cruciferous greens that targets a few key midlife health priorities:
- Protect Lean Muscle Mass: Cod is a lean, highly digestible source of complete protein. Getting adequate protein supports muscle synthesis and helps keep your resting metabolic rate strong.
- Support Hormonal Pathways: Broccoli and asparagus are packed with fiber and specific plant compounds (like glucosinolates) that support liver function and help your digestive tract clear out used hormones.
- Lower Systemic Inflammation: Combining extra virgin olive oil with warm spices like turmeric, minced garlic, and black pepper provides a steady dose of antioxidants. Lowering systemic inflammation is essential if you are managing midlife brain fog using holistic nutrition.
- Save Energy and Time: On days when fatigue sets in, a single baking sheet means minimal prep and almost zero cleanup.

One-Pan Cod & Veggies: Fight Belly Fat & Balance Hormones
- Prep Time: 10 minutes
- Cook Time: 25 minutes
- Total Time: 35 minutes
- Yield: 2 servings 1x
Ingredients
- 2 wild-caught cod fillets (about 5–6 oz each)
- 2 cups broccoli florets, chopped into small bite-sized pieces
- 2 cups asparagus, trimmed and cut into 2-inch pieces
- 2 cups butternut squash, diced into small cubes
- 2 tbsp extra virgin olive oil
- 1 tsp ground turmeric
- 1/2 tsp ground black pepper
- 2 cloves garlic, minced
- 1/2 tsp sea salt
- 1 fresh lemon, sliced into thin rounds
Instructions
1. Preheat & prep: Heat your oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper for easy cleanup.
2. Arrange the ingredients: Place the cod fillets in the center of the baking sheet. Spread the broccoli, asparagus, and diced butternut squash around the fish in an even later. (Tip: Keep the squash cubes small so they cook in the same timeframe as the greens).
3. Season & oil: Drizzle the olive oil evenly over the cod and veggies. Evenly sprinkle the turmeric, black pepper, minced garlic, and sea salt over everything.
4. Add lemon: Top each cod fillet with a couple of fresh lemon slice.
5. Roast: Bake for 20-25 minutes, or until the cod is opaque and flakes easily with a fork, and the butternut squash is tender.
6. Serve: Transfer warm to plates, squeeze any remaining fresh lemon juice over the top, and enjoy!
Notes
Recipe Variations & Customizations
- Switch the protein: If you don’t have cod on hand, any firm white fish like halibut or wild salmon works fine. For a plant-based option, swap fish for sliced organic tempeh.
- Adjust the vegetables: You can trade butternut squash for sweet potato cubes, or use cauliflower florets in place of broccoli. Just keep the vegetable sizes consistent so they roast evenly.
A Quick Thought on Meal Timing and Sleep
How and when you eat matters just as much as what you eat. If you struggle with broken sleep or middle-of-the-night waking, eating a light, nutrient-dense dinner like this 2 to 3 hours before bed can make a big difference. Giving your body enough time to digest helps lower nighttime cortisol levels, which is a major factor when addressing sleep disruption in menopause.
