Grilled Tofu and Vegetable Kabobs

Ingredients
1 block of firm tofu, pressed and cut into cubes
Assorted vegetables (bell peppers, red onions, cherry tomatoes, zucchini, etc.)
¼ cup tamari or gluten-free soy sauce
2 tablespoons maple syrup or agave nectar
2 tablespoons apple cider vinegar
2 cloves garlic, minced
1 teaspoon smoked paprika
Salt and pepper to taste
Skewers for grilling
Instructions
- In a bowl, whisk together tamari or soy sauce, maple syrup or agave nectar, apple cider vinegar, minced garlic, smoked paprika, salt, and pepper to make the marinade.
- Thread the tofu cubes and vegetables onto skewers, alternating between different types.
- Place the skewers in a shallow dish and pour the marinade over them. Allow them to marinate for at least 30 minutes.
- Preheat the grill to medium-high heat.
- Grill the kabobs for about 10-12 minutes, turning occasionally, until the tofu is lightly charred and the vegetables are tender.
- Serve the kabobs as the main dish, and you can pair them with a side dish of your choice.
