Grilled Tofu and Vegetable Kabobs

Ingredients

Scale

1 block of firm tofu, pressed and cut into cubes

Assorted vegetables (bell peppers, red onions, cherry tomatoes, zucchini, etc.)

¼ cup tamari or gluten-free soy sauce

2 tablespoons maple syrup or agave nectar

2 tablespoons apple cider vinegar

2 cloves garlic, minced

1 teaspoon smoked paprika

Salt and pepper to taste

Skewers for grilling


Instructions

  1. In a bowl, whisk together tamari or soy sauce, maple syrup or agave nectar, apple cider vinegar, minced garlic, smoked paprika, salt, and pepper to make the marinade.
  2. Thread the tofu cubes and vegetables onto skewers, alternating between different types.
  3. Place the skewers in a shallow dish and pour the marinade over them. Allow them to marinate for at least 30 minutes.
  4. Preheat the grill to medium-high heat.
  5. Grill the kabobs for about 10-12 minutes, turning occasionally, until the tofu is lightly charred and the vegetables are tender.
  6. Serve the kabobs as the main dish, and you can pair them with a side dish of your choice.
