White Bean Salad Recipe

Description

When fresh tomatoes are in season, this white bean salad is by far one of my favorite lunches to make. It’s quick, easy, and vibrant, which makes my taste buds happy.


Ingredients

Scale

1 tsp Balsamic vinegar

dash Black pepper (ground)

dash Garlic (minced)

1 tbsp Lemon juice

1 tsp Olive Oil, Extra Virgin

2 tbsp Parsley, fresh

1 dash Thyme, dried

1/4 cup chopped Tomato

1 cup of White beans, canned

2 tbsp chopped Yellow onion


Instructions

  1. In a large bowl, combine beans, tomatoes, onions, and parsley.
  2. In another bowl, mix oil, vinegar, lemon juice, minced garlic, thyme, and ground black pepper. Add to bean mixture and toss.
