Healthy Nut Butter Chickpea Cookies

This guilt-free treat is perfect for a snack or dessert!
Ingredients
1 13.5 oz can chickpeas drained & rinsed
2 large bananas
1/4 cup nut butter (sub tahini for nut-free)
1 tsp baking powder
4 Tbsp unsweetened apple sauce
3/4 cup quick-cooking steel-cut oats or rolled oats
1 tsp pure vanilla extract (optional)
2 tbsp maple syrup (optional)
Instructions
- Preheat oven to 350F and line a large baking tray with parchment paper.
- Add all the ingredients to your food processor and process until smooth.
- Scoop the mixture onto your prepared baking sheet and form your cookies.
- Bake for 18-22 minutes or until lightly golden around the edges. Allow cookies to cool completely to help them firm up before serving.
Notes
If your can is larger, add another 1-2 tablespoons of unsweetened apple sauce to the mix.
The chickpea cookies are kept covered at room temperature for 2-3 days, refrigerated for 5-6 days, or frozen for up to 2 months in an airtight container.
