Made with wholesome ingredients like chickpeas, bananas, nut butter, and oats, these cookies are perfect for a snack or dessert. Plus, they’re so delicious, you won’t even believe they’re good for you!


Ingredients

  • 1 (13.5 oz) can chickpeas, drained & rinsed
  • 2 large bananas
  • 1/4 cup nut butter (sub tahini for nut-free)
  • 1 tsp baking powder
  • 4 tbsp unsweetened applesauce
  • 3/4 cup quick-cooking steel-cut oats or rolled oats
  • 1 tsp pure vanilla extract (optional)
  • 2 tbsp maple syrup (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and line a large baking tray with parchment paper.
  2. Prepare the Dough: In a food processor, combine all the ingredients and process until smooth, scraping down the sides of the bowl as needed.
  3. Form Cookies: Scoop the cookie dough onto the prepared baking sheet and use your hands to form cookies, flattening them slightly.
  4. Bake: Bake the cookies for 18-22 minutes or until lightly golden around the edges.
  5. Cool and Serve: Allow the cookies to cool completely on the baking sheet to help them firm up before serving.
 

Notes

  • If your can of chickpeas is larger than 13.5 oz, you may need to add an additional 1-2 tablespoons of unsweetened applesauce to achieve the desired consistency.
  • These chickpea cookies can be kept covered at room temperature for 2-3 days, refrigerated for 5-6 days, or frozen for up to 2 months in an airtight container.
  • This recipe will make approximately 12 – 18 cookies
