  • 2 carrots
  • 1 zucchini
  • 1 yellow squash
  • 1 package of frozen broccoli, thawed to room temperature
  • 4 cups vegetable stock
  • 1⁄2 tsp curry powder
  • 1⁄2 tsp cumin powder
  • A dash of rosemary
  • Salt and pepper to taste


  1. Prepare the Vegetable Stock. In a large pot, bring the vegetable stock to a boil. This flavorful base will enhance the taste of our creamy vegetable soup.
  2. Chop and Add the Vegetables. While the stock is heating, prepare the vegetables. Peel and chop the carrots into small, bite-sized pieces. Slice the zucchini and yellow squash into thin rounds. Add the carrots, zucchini, yellow squash, and thawed broccoli to the boiling vegetable stock.
  3. Infuse the Aromas. Sprinkle the curry powder, cumin powder, and a dash of rosemary into the pot. These aromatic spices will infuse the soup with delightful flavors. Stir well to distribute the spices evenly.
  4. Cook to Perfection. Cover the pot and let the soup simmer for about 10 minutes or until the vegetables become tender. This gentle cooking process ensures that the flavors meld together, creating a harmonious taste.
  5. Season and Adjust. Once the vegetables are cooked, check for seasoning. Add salt and pepper according to your taste preferences. Remember to start with a small amount and gradually adjust to achieve the perfect balance.
  6. Blend for Creaminess. To achieve a velvety texture, we’ll blend the soup. Use a ladle to transfer small batches of the soup into a blender. Process each batch until smooth and creamy. If you prefer some texture, reserve a portion of the soup before blending and mix the smooth and chunky parts together.
