Hey there!

If you’ve ever wished for a cookie that satisfies your sweet tooth and supports your health goals especially during hormonal transitions, meet your new pantry hero: chickpea cookies. 🍪

These soft, chewy bites are packed with plant-based protein, fiber, and slow-digesting carbs that won’t spike your blood sugar. Plus, they’re naturally gluten-free, flourless, and surprisingly indulgent. No one will guess they’re made from chickpeas!

Why Chickpeas Deserve a Spot in Your Cookie Jar

Chickpeas (aka garbanzo beans) aren’t just for hummus. They’re a nutritional powerhouse with benefits that go far beyond taste:

  • Hormone-friendly fiber: Chickpeas contain both soluble and insoluble fiber, which help regulate estrogen levels and support gut health.
  • Plant-based protein: With 14g of protein per cup, chickpeas help stabilize blood sugar and keep cravings in check.
  • Rich in minerals: They’re loaded with magnesium, iron, and zinc. These nutrients support energy, mood, and metabolism.
  • Low glycemic index: Chickpeas digest slowly, helping you avoid the blood sugar rollercoaster that often triggers fatigue and irritability.

How to Enjoy Chickpea Cookies Throughout Your Day

These cookies aren’t just for dessert. They’re perfect as:

  • A post-workout bite that won’t undo your progress
  • A mid-afternoon pick-me-up that won’t spike your blood sugar
  • A hormone-friendly treat that feels indulgent but supports your goals
  • A freezer-friendly option for busy weeks or travel days

Now grab your ingredients! 🥣 These chickpea cookies are about to become your new favorite treat.

Description

These Healthy Chickpea Cookies are soft, fluffy, and actually a healthier version of traditional cookies! Made with wholesome ingredients like chickpeas, bananas, nut butter, and oats, these cookies are perfect for a snack or dessert.

Ingredients

Scale
  • 1 (13.5 oz) can chickpeas, drained & rinsed
  • 2 large bananas
  • 1/4 cup nut butter (sub tahini for nut-free)
  • 1 tsp baking powder
  • 4 tbsp unsweetened applesauce
  • 3/4 cup quick-cooking steel-cut oats or rolled oats
  • 1 tsp pure vanilla extract
  • 2 tbsp maple syrup (optional)
  • A pinch of sea salt to round out sweetness and enhance flavor

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and line a large baking tray with parchment paper.
  2. Prepare the Dough: In a food processor, combine all the ingredients and process until smooth, scraping down the sides of the bowl as needed.
  3. Form Cookies: Scoop the cookie dough onto the prepared baking sheet and use your hands to form cookies, flattening them slightly.
  4. Bake: Bake the cookies for 18-20 minutes or until lightly golden around the edges.
  5. Cool and Serve: Allow the cookies to cool completely on the baking sheet to help them firm up before serving.

Notes

  • If your can of chickpeas is larger than 13.5 oz, you may need to add an additional 1-2 tablespoons of unsweetened applesauce to achieve the desired consistency.
  • These chickpea cookies can be kept covered at room temperature for 2-3 days, refrigerated for 5-6 days, or frozen for up to 2 months in an airtight container.
  • This recipe will make approximately 12 – 18 cookies

Variations of Healthy Chickpea Cookies

  • Coconut Almond Crunch: Add a tropical twist to your cookies by mixing in 1/4 cup shredded coconut and 1/4 cup chopped almonds. The combination of crunchy almonds and sweet coconut adds texture and flavor to these delightful treats, making them a perfect snack or dessert option.
  • Pecan Perfection: Enhance the natural sweetness of these cookies by adding 1/4 cup chopped pecans to the dough. The warm, nutty flavor of pecans creates a decadent treat that’s perfect for enjoying with a cup of tea or coffee.
  • Lemon Blueberry Burst: For a refreshing and zesty twist, add the zest of one lemon and 1/2 cup fresh blueberries to the cookie dough. The bright citrus flavor of the lemon zest and the burst of juicy blueberries create a deliciously tangy and fruity cookie that’s perfect for summer snacking.

With these delicious variations of Healthy Chickpea Cookies, you can enjoy a different flavor combination every time you bake.
