These baked broccoli fritters check every box for a weeknight recipe: simple to prep, satisfying to eat, and surprisingly nutrient-dense. They’re golden on the outside, tender on the inside, and completely free of deep frying. Whether you serve them as a light lunch, a side dish, or a grab-and-go snack, they offer a delicious way to bring more greens into your day, without feeling like you’re eating a salad.
Why Broccoli Fritters Deserve a Spot in Your Rotation
Broccoli is a powerhouse veggie, packed with fiber, vitamin C, and sulforaphane, a compound that supports estrogen metabolism and detox pathways. For that reason, it earns a place in my collection of recipes for menopause, which aligns with how I build every meal: steady, supportive, and hormone-friendly.
These broccoli fritters use only low glycemic ingredients. Nutritional yeast adds a cheesy flavor and B vitamins without spiking blood sugar. And instead of wheat flour, I lean on almond flour or quinoa flakes for a gentler carb profile that supports energy without the crash.

Crispy Broccoli Fritters
- Prep Time: 15 minutes
- Cook Time: 25 minutes
- Total Time: 40 minutes
- Yield: 8–10 small patties 1x
Description
These broccoli fritters are crisp, savory, and speckled with vibrant green.
Ingredients
2 cups finely chopped broccoli (lightly steamed or pulsed in a food processor)
1/2 cup almond flour or quinoa flakes
1/4 cup red onion, finely chopped
2 tablespoons ground flaxseed + 5 tablespoons water (flax “egg”)
1/4 cup nutritional yeast (optional, for cheesy flavor)
1/2 teaspoon garlic powder
1/2 teaspoon sea salt
Black pepper to taste
Olive oil spray (for baking)
Instructions
1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. Mix the ground flaxseed and water in a small bowl. Let it sit for 5-10 minutes to gel.
3. In a large bowl, combine the broccoli, almond flour or quinoa flakes, onion, nutritional yeast, garlic powder, salt, and pepper.
4. Stir in the flax mixture until everything holds together. If the mix feels too wet, add a bit more flour.
5. Shape into 8-10 small patties and place them on the baking sheet.
6. Lightly spray the tops with olive oil. Bake for 20-25 minutes, flipping halfway through, until the edges turn golden and crisp.
Notes
These broccoli fritters work well with a dollop of hummus or a drizzle of tahini.
