Zucchini Pasta with Avocado Cream Sauce

Description

Whip up a quick and refreshing Zucchini Avocado Pasta that’s as easy as it is delicious, taking just 10 minutes from start to finish. Perfect for two, this vibrant dish combines the goodness of zucchini noodles with a creamy avocado sauce for a satisfying and nutritious meal.


Ingredients

Scale

2 large zucchini, ends trimmed and spiralized

1 ripe avocado

1/2 cucumber, chopped

Juice of 1/2 a lemon

1 clove garlic

2 tablespoons almond or coconut milk

8 leaves of basil

Salt & pepper to taste

Optional: Halved cherry tomatoes & basil leaves for garnish


Instructions

  1. Place zucchini spirals in a large bowl, creating a base for your pasta.
  2. In a food processor, blend together the ripe avocado, chopped cucumber, lemon juice, garlic, almond or coconut milk, and basil leaves until you achieve a smooth and creamy consistency.
  3. Toss the zucchini spirals generously with the lush avocado sauce until each strand is fully coated, ensuring a burst of flavor in every bite.

Notes

Optional: Garnish your Zucchini Avocado Pasta with halved cherry tomatoes and additional basil leaves for a pop of color and freshness. Season with salt and pepper to taste.
