Description

A bowl of avocado & tomato salad with crisp lettuce, ripe tomato halves, creamy avocado chunks, and thin red onion slices.


Ingredients

Scale

2 ripe avocados, chopped

1 cup cherry tomatoes, halved

1 small red onion, thinly sliced

2 cups leafy greens (romaine or green leaf lettuce)

Juice of 1 lemon

2 tablespoons extra virgin olive oil

Chopped parsley or cilantro (optional)

Sea salt and freshly ground black pepper to taste


Instructions

1. Layer the leafy greens in a serving bowl.

2. Add avocado, cherry tomatoes, and red onion.
