2 medium zucchinis, cut into 1/2-inch fries 1/2 cup fine blanched almond flour 2 tablespoons coconut flour (or arrowroot powder) 1 teaspoon garlic powder 1 teaspoon onion powder 1/2 teaspoon dried oregano or Italian seasoning 1/2 teaspoon sea salt 1/4 teaspoon black pepper 1 large egg (beaten) Avocado oil spray

Instructions

1. Prep the zucchini: Cut the ends off the zucchinis, slice them in half horizontally, then slice each section into 1/2-inch thick fry sticks. Lay them on a paper towel, sprinkle with a tiny pinch of salt, and let rest for 10 minutes. Blot dry with a paper towel.

2. Set up your coating station: In one bowl, whisk the egg. In a second bowl, combine the almond flour, coconut flour, garlic powder, onion powder, oregano, sea salt, and black pepper.

3. Bread the fries: Dip each zucchini stick into the egg mixture, let any excess drip off, then press into the almond flour and coconut flour mixture until evenly coated.

4. Preheat the air fryer: Set your air fryer to 390°F (200°C) for 3 minutes.

5. Arrange and spray: Place the coated zucchini fries in the air fryer basket in a single layer, ensuring they do not touch. Lightly mist the tops with avocado oil spray.

6. Air fry: Cook for 10 minutes, flipping them at the 5-minute mark and lightly spraying the other side, until golden brown and crispy.

7. Serve immediately: Enjoy warm with a side of unsweetened garlic-herb avocado mayo or simple marinara.
