Ingredients

  • Assorted vegetables (bell peppers, zucchini, eggplant, cherry tomatoes, red onion, etc.), cut into chunks
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium heat.
  2. In a bowl, whisk together olive oil, minced garlic, lemon juice, salt, and pepper.
  3. Thread the vegetables onto skewers, alternating different types.
  4. Brush the vegetable skewers with the marinade.
  5. Grill the skewers for about 10-15 minutes, turning occasionally, until the vegetables are tender and lightly charred.
