- 1 (13.5 oz) can chickpeas, drained & rinsed
- 2 large bananas
- 1/4 cup nut butter (sub tahini for nut-free)
- 1 tsp baking powder
- 4 tbsp unsweetened applesauce
- 3/4 cup quick-cooking steel-cut oats or rolled oats
- 1 tsp pure vanilla extract (optional)
- 2 tbsp maple syrup (optional)
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and line a large baking tray with parchment paper.
- Prepare the Dough: In a food processor, combine all the ingredients and process until smooth, scraping down the sides of the bowl as needed.
- Form Cookies: Scoop the cookie dough onto the prepared baking sheet and use your hands to form cookies, flattening them slightly.
- Bake: Bake the cookies for 18-22 minutes or until lightly golden around the edges.
- Cool and Serve: Allow the cookies to cool completely on the baking sheet to help them firm up before serving.
Notes
- If your can of chickpeas is larger than 13.5 oz, you may need to add an additional 1-2 tablespoons of unsweetened applesauce to achieve the desired consistency.
- These chickpea cookies can be kept covered at room temperature for 2-3 days, refrigerated for 5-6 days, or frozen for up to 2 months in an airtight container.
- This recipe will make approximately 12 – 18 cookies
