  • 1/4 cup raw pumpkin seeds
  • Zest + juice from three organic lemons
  • 1 tablespoon Chia seeds
  • 1 ½ cups Medjool dates, pitted
  • Pinch of Himalayan pink salt
  • 1/4 cup of unsweetened finely shredded coconut

Instructions

  1. Prepare the Ingredients: Gather all the necessary ingredients listed above.

  2. Combine Nuts and Seeds: Place the raw almonds and pumpkin seeds into your Vitamix or high-powered blender. Pulse until finely chopped, but be cautious not to over-blend, as we want to maintain some texture.

  3. Add Remaining Ingredients: To the blender, add the Chia seeds, pitted Medjool dates, pinch of Himalayan pink salt, lemon zest, and lemon juice.

  4. Blend Until Formed: Blend the mixture until it starts to come together into a sticky dough-like consistency.

  5. Form the Bites: Transfer the mixture onto a plate and shape it into a square. Use a knife to score 12 even pieces, then roll each piece into a ball between your palms.

  6. Coat with Coconut: Roll each ball into the unsweetened finely shredded coconut until evenly coated, pressing gently to adhere.
