Description

This is a simple breakfast skillet made with diced sweet potatoes, zucchini, mushrooms, and spinach, with eggs cracked right into the middle. It’s a great option if you want a healthy, filling breakfast.


Ingredients

Scale

Avocado oil spray

1 small sweet potato (200g), diced small

1 cup mushrooms, sliced

1 bell pepper (150g), chopped

1 small zucchini (120g), chopped

1/2 small onion (75g), sliced

2 cups baby spinach

1/2 tsp garlic powder or smoked paprika (optional)

6 large eggs

Salt and pepper, to taste


Instructions

1. Mist a large skillet with avocado oil spray and heat over medium heat. Add the sweet potato and cook 6-8 minutes, stirring occasionally and re-misting the pan as needed to prevent sticking.

2. Add the onion, mushrooms, bell pepper, and zucchini. Season with salt, pepper, and any spices you like. Cook until vegetables are tender and lightly browned.

3. Stir in the baby spinach and let it wilt, about 1 minute.

4. Make small wells in the hash and crack the eggs directly into the pan. Cover and cook until egg whites are set and edges are crispy. Leave yolks runny or cook longer if you prefer.

5. Finish with any toppings you like and serve straight from the pan. Enjoy!
