Description

This healthy holiday granola will quickly become a family favorite.


Ingredients

Scale
  • 3 cups (240 g) rolled oats
  • 2 cups (240 g) of pecans and pistachios
  • ¾ cup (60 g) shredded coconut
  • 1 tsp sea salt
  • 2 tsp pumpkin pie spice or cinnamon
  • ¼ cup (60 ml) coconut oil, melted
  • 1 Tbsp vanilla
  • ⅓ cup (80 ml) maple syrup
  • 1 cup (110 g) dried cranberries

Instructions

  1. Preheat your oven to 250ºF/120ºC. Line a large baking sheet with parchment paper.
  2. In a large bowl, combine the oats, nuts, coconut, salt, and pumpkin pie spice, mixing until well combined. Set aside.
  3. In a small bowl, mix together the coconut oil, vanilla, and maple syrup. Drizzle the liquid over the oat mixture and stir until evenly combined.
  4. Pour the mixture onto the baking sheet, spreading it out until it’s in a single layer. Place in the oven and bake for 60 minutes, stirring every 15-20 minutes so it browns evenly.
  5. Remove from the oven and let cool. Stir in the dried fruit, and store in an airtight container for up to 2 weeks.
