Grilled Acorn Squash Wedges

2 acorn squashes

2 tablespoons olive oil

1 teaspoon ground cumin

1/2 teaspoon smoked paprika

Salt and pepper to taste


Instructions

  1. Preheat the grill to medium heat.
  2. Cut the acorn squashes in half, remove the seeds, and slice each half into wedges.
  3. In a small bowl, combine the olive oil, ground cumin, smoked paprika, salt, and pepper.
  4. Brush both sides of the acorn squash wedges with the spice mixture.
  5. Place the wedges on the grill and cook for about 5-7 minutes per side until they are tender and grill marks appear.
  6. Remove from the grill and serve the vibrant and sweet grilled acorn squash wedges as a flavorful alternative to potatoes.
