2 cloves garlic, minced

Salt and pepper to taste
Instructions
- Preheat the grill to medium-high heat.
- Thread the vegetables onto skewers, alternating between different types.
- In a small bowl, whisk together the olive oil, lemon juice, minced garlic, chopped herbs, salt, and pepper.
- Brush the marinade onto the vegetable skewers.
- Grill the skewers for about 8-10 minutes, turning occasionally, until the vegetables are tender and lightly charred.
- Serve hot as an appetizer.
