¼ cup olive oil

2 tablespoons fresh lemon juice

2 cloves garlic, minced

1 tablespoon chopped fresh herbs (such as basil, thyme, or rosemary)

Salt and pepper to taste


Instructions

  1. Preheat the grill to medium-high heat.
  2. Thread the vegetables onto skewers, alternating between different types.
  3. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, chopped herbs, salt, and pepper.
  4. Brush the marinade onto the vegetable skewers.
  5. Grill the skewers for about 8-10 minutes, turning occasionally, until the vegetables are tender and lightly charred.
  6. Serve hot as an appetizer.
