  • 1 cup asparagus, chopped into bite-sized pieces
  • 1/2 cup dairy-free cheese (crumbled almond-based feta or nutritional yeast for a cheesy flavor)
  • 1 tbsp avocado oil (for cooking)
  • Pinch of salt and pepper
  • Handful of fresh herbs (parsley or dill)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Sauté asparagus in an oven-safe skillet with avocado oil over medium heat for 3-4 minutes until tender.
