Description

These broccoli fritters are crisp, savory, and speckled with vibrant green.


Ingredients

2 cups finely chopped broccoli (lightly steamed or pulsed in a food processor)

1/2 cup almond flour or quinoa flakes

1/4 cup red onion, finely chopped

2 tablespoons ground flaxseed + 5 tablespoons water (flax “egg”)

1/4 cup nutritional yeast (optional, for cheesy flavor)

1/2 teaspoon garlic powder

1/2 teaspoon sea salt

Black pepper to taste

Olive oil spray (for baking)


Instructions

1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

2. Mix the ground flaxseed and water in a small bowl. Let it sit for 5-10 minutes to gel.

3. In a large bowl, combine the broccoli, almond flour or quinoa flakes, onion, nutritional yeast, garlic powder, salt, and pepper.

4. Stir in the flax mixture until everything holds together. If the mix feels too wet, add a bit more flour.

5. Shape into 8-10 small patties and place them on the baking sheet.

6. Lightly spray the tops with olive oil. Bake for 20-25 minutes, flipping halfway through, until the edges turn golden and crisp.


Notes

These broccoli fritters work well with a dollop of hummus or a drizzle of tahini.
