Description

This beet salad with citrus dressing is a vibrant, nutrient-packed dish that combines the natural sweetness of roasted beets with the brightness of citrus fruits.


Ingredients

Scale

3 medium beets, roasted and sliced

2 cups mixed greens (aragula, spinach, or kale)

1 orange, segmented

1/2 grapefruit, segmented

1/4 cup walnuts or pumpkin seeds

2 tbsp olive oil

1 tbsp lemon juice

1 tsp maple syrup, optional

Pinch of sea salt and black pepper


Instructions

1. Roast the beets at 400°F (200°C) for 35-40 minutes until tender. Cool, peel, and slice.

2. Arrange greens on a platter, then layer beets, citrus segments, and nuts.
