Ingredients

1 lb. fresh green beans, trimmed

1 cup raw cashews, soaked for 3-4 hours

1 cup unsweetened almond milk

2 tbsp nutritional yeast

1 tbsp olive oil or avocado oil

1 medium onion, thinly sliced

2 cloves garlic, minced

1 cup mushrooms, sliced

1 tsp sea salt

1/2 tsp black pepper

Crispy baked onions, for toppings


Instructions

1. Prep the cashew cream: Drain soaked cashews and blend with almond milk, nutritional yeast, salt, and pepper until silky smooth.

2. Cook the veggies: In a skillet, sauté onion, garlic, and mushrooms in olive oil until golden.

3. Combine: Add green beans and cashew cream to the skillet. Stir until beans are coated in creamy goodness.

4. Bake: Transfer to a casserole dish, top with crispy onions, and bake at 375°F (190°C) for 20 minutes.

5. Serve golden, bubbling, and holiday-ready.
